betty b

After two weeks of not feeling well due to a bout with pancreatitis, Betty seems to be stabilizing and on the road to recovery. Our fingers & paws are crossed.

We watched the final Battlestar Galactica episode this weekend & it was fantastic!
But, since it's been such an investment of our time since we started, we're left wondering what to do now.

Unexpected vet bills for Betty have left us without a penny to spare this month. So, I'm lusting after these prizes from a distance (for now). And, happily, I might add, because my kitty B is feeling much better & getting back to her normal spunky self. Three cheers for Betty!

crepes, etc

Crepe recipe:

3/4 cup flour
3/4 cup milk
1 egg
1 tbsp butter
1 tsp vanilla extract
2 tbsp sugar
pinch of salt
  1. In a large mixing bowl, whisk together flour and egg. Gradually, add in the milk, melted butter, vanilla, sugar, and salt. Mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 recipe for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
  4. Fill with: sugar, fresh strawberries, bananas, Nutella, etc.
  5. Serve hot.

My paperwhites got off to a slow start this season, but they've finally bloomed!
